But being able to make and share a favorite treat can brighten a day, and cookies are loved by pretty much anybody, and even nonbakers break out a cookie sheet now and then. Through a bit of chemistry magic, the delicious treats in Cookie Chemistry are free of dairy (any milk, butter, or yogurt), eggs, peanuts, tree nuts, seeds, and soy. About the Author
As a medical writer and editor, Nicole uses her clinical pharmacy training to teach patients about health topics, from diabetes or osteoporosis to autoimmune conditions or cancers. Her health articles appear in print and online in Psoriasis Advance, on Cancer.net, at Remedy Media's HealthCentral Heart Disease hub, and in medical reference books for patients. Nicole's professional experiences include continuing education program development; medical journal and treatment guideline editing; and book writing and reviewing. She is an active speaker and educator at national medical communication conferences and holds a Doctor of Pharmacy degree from the University of Toledo and a communications certificate from the American Medical Writers Association.
In addition to managing her medical communications business, Nicole maintains a presence in the food allergy community as a parent advocate, educator, and recipe developer. She participates in the Freedible online allergy-blogging and custom-eater community, is a parent member of FARE, and is an allied health professional member of the Allergy and Asthma Network.
Nicole has seen the extent of allergens and allergic reactions first hand in herself, her patients, and her children. When her youngest child was diagnosed with multiple severe food allergies, though, all "essential" ingredients were suddenly off limits. Nicole uses her science background to experiment with safe ingredients and design new allergy-friendly recipes for her family and other busy families. After Nicole underwent a valve-replacement open heart surgery, she incorporated heart-healthy ingredient choices into recipes, too. In 2016, she earned a nutrition certificate to complement her medicinal knowledge and continues to learn about healthy options for balanced nutrition while exploring new combinations of allergy-safe ingredients.
